Welcome to another installment of our new Eater Guides feature, Where Chefs Eat. We want to know where the men and women of San Diego restaurants go to feed on their all-too-rare days off. Where do they choose to spend their hard-earned pay and what do they crave?

trey%20photo%20new.jpgSince 1999, Trey Foshee has been at the helm of La Jolla's iconic George's at the Cove, which encompasses George's Bar, Ocean Terrace and George's California Modern, their bastion of fine dining where the chef plates up his innovative, locally-driven cuisine through seasonal menus that includes his TBL3 experience; Foshee's chef de cuisine, Jon Bautista, was recently named an Eater Young Guns semi-finalist.

Here, Foshee shares his favorite local dining spots, from Chula Vista to Carlsbad; see where the chef eats sushi, buys coffee, and stops after a surf session.

This is my local coffee spot and where I buy beans for the house. They take it seriously but are friendly and fast. There pastries are good but I go for the coffee.

I have known Jason for over 20 years and we have worked together twice. He is a good friend and one of the best chefs in SD. I never get a dish from him that has anything unnecessary on it, it's always clear why each ingredient is there and to me that’s the sign of a great chef.

A good stop after a surf in Oceanside. Everything chicken is great here. Nice people serving good and tasty Mexican food.

I don’t get there very often so I don’t have a regular item that I order but pretty much all their sandwiches kick ass.

Birria is a dish I crave and this is the place I go for it, usually on Sundays.

They have great barbacoa, mixiotes and sopes and this the only place I know that makes and serves pulque.

The Pho Shop

I order the Bun Thit Nuong, it's seasoned well, and the meat is super tasty with a good balance of vegetables.

This place just has a neighborhood vibe. We go on Sundays, which is a tradition for a lot of families in Encinitas/Cardiff.

We go almost every Monday after tennis practice. Each member of the family has their favorite items, I just ask them to send me 4-5 orders of sushi. Always super fresh and seasonal, and they carry Koshihikari Echigo which is a rice beer that I enjoy.
