Conveying still-warm doughnuts and freshly brewed coffee, Copper Top Coffee & Donuts is reopening in Pacific Beach by the end of the year. Founded in Hillcrest in 2018 and shuttered last spring, Copper Top launched with a high-traffic drive-thru window, a method of service that owner Josh McCorkle says proved difficult to manage with a menu of doughnuts that are made to order. It’s one of the reasons why McCorkle says he decided not to extend his lease on Washington Street.

Telling Eater that he’d like to open three to four more locations around town, McCorkle is reestablishing Copper Top Coffee & Donuts on a busy stretch of Mission Boulevard. The new Pacific Beach storefront will offer a large selection of doughnuts, which are cooked fresh when ordered and feature housemade sauces and toppings like salted caramel and marshmallow. Bestsellers include 16 Candles, made with house white chocolate, coconut, and sprinkles, and the Elvis, which incorporates peanut butter, raspberry jam, bananas, and bacon. Other menu items include breakfast sandwiches, acai bowls, and smoothies.

The space will also allow the shop to expand its options for coffee and espresso drinks. Copper Top currently uses beans roasted at its sister company in Seattle, although McCorkle says he’d like to eventually open a roastery in San Diego.
