Paola Richard, the founder of GelatoLove in Carlsbad, is bringing her unique spin on gelato to RoVino The Foodery, the East Village’s large-scale Italian market and restaurant that was established in 2019 by team behind Little Italy’s popular RoVino Rotisserie + Wine. GelatoLove will taking over The Foodery’s gelato counter, with a grand opening scheduled for July 30 from 11 a.m. to 9 p.m.
Originally opened in 2015 at Carlsbad’s Village Faire shopping center as Gaia Gelato, the company was rebranded as GelatoLove following the 2018 debut of a new production lab and tasting room at the Carlsbad Gateway Center. According to Richard, GelatoLove is the first company in the world to use allulose to sweeten its traditional small-batch Italian gelato. Derived from fruits like kiwis and figs, the lower-calorie sugar purportedly does not have an impact on blood glucose levels.
GelatoLove’s new East Village outpost will offer 18 daily flavors from a rotating list that could range from Carlsbad strawberry and organic lemon to hazelnut chocolate and tiramisu. The shop will also feature a selection of gelato cakes.
In addition to the gelato counter, Richard will oversee operations of The Foodery’s espresso bar which will be a showcase for Barini Coffee, a roaster whose roots in Verona, Italy date back 50 years. Richard says this will be Barini’s very first retail venture in the U.S..
