Silverlake Ramen started out in 2012 as a small operation on Sunset Boulevard in Los Angeles but by 2017, its success spurred the company to launch a franchising program that has multiplied the ramen shop across LA and Orange County and landed outposts in further-flung locations like Washington, Texas, and Georgia.
Its next wave of expansion includes San Diego, where Silverlake Ramen will open a restaurant at the Fashion Valley mall in the space that formerly housed Korean fast-casual concept Bibigo Kitchen.
Offering a variety of ramen, from chicken-based shoyu to garlic truffle and a vegetarian version, Silverlake is best known for The Blaze, a spicy tonkotsu ramen that features a creamy pork broth. Other dishes include tsukemen, or dipping ramen, rice bowls, and a range of appetizers.
A rep for the company tells Eater that the Fashion Valley location will be debuting this July, and that they are currently working on more stores in the San Diego area.
