A butcher shop that goes beyond the meat counter is coming to Little Italy, where it’s currently scheduled to open in mid-March at the corner of W. Hawthorn and India Street in the former Grab & Go Subs spot. Blue Box Butcher will have a small retail area but most of its business will be geared towards takeout, with orders able to be placed online and picked up within 10 to 15 minutes or delivery scheduled through third-party sites.

Most of its cuts will be supplied by Brandt Beef out of Brawley, California, and Creekstone Farms, with certified halal meat also available. The butcher shop’s line-up, ranging from American and Japanese wagyu to prime and choice ribeyes, a pork porterhouse, a house burger blend, and marinated chicken, will be available to purchase a la carte but Blue Box, banking on dining culture being forever changed by the pandemic, is also offering pre-boxed, restaurant-style meals with sides and sauces to cook at home.

A rep for the company says it’s also planning to open another location on Fifth Avenue in Bankers Hill by the end of the year.
