Kettner Exchange’s North County Sibling Is Due in October

Waverly is set to open in Cardiff next month

Opening in the laid-back town of Cardiff-by-the-Sea by early October, Waverly is a new all-day restaurant and lounge from SDCM, the hospitality group behind Kettner Exchange and The Grass Skirt. With a coastal chic vibe by Encinitas-based firm Design 4 Corners (Kaito Sushi), it’ll have a distinctly different personality than its nighttime-focused siblings and gives corporate executive chef Brian Redzikowski the opportunity to build a menu that encompasses daily breakfast, lunch, dinner, and weekend brunch — from lobster ceviche and ricotta agnolotti to a wild salmon bowl, lamb tikka masala, soft poached eggs with spinach, heirloom tomato, serrano chile, and ancient grains, and funfetti pancakes for kids.

And there’s no doubt that Waverly will be cocktail contender, with general manger and mezcal expert Chris Simmons on board as well as Eric Johnson (Home & Away) and Leigh Lecap (Jeune et Jolie) signed on as co-mangers of the bar and drinks ranging from “The Waverly” with gin, blueberry oat milk, lemon, and nutmeg to an Old Fashioned variation with bourbon, macadamia nut, and mole.
