One of San Diego’s most dominant morning eats brands will add another breakfast-related eatery to its roster. Rise & Shine Restaurant Group, which runs the ever-multiplying Breakfast Republic and Breakfast Company restaurants, is launching a fast-casual offshoot called Eggies.
The first two outposts of the new concept are scheduled to debut in April and will be paired up with the existing Breakfast Republic locations on G Street in the East Village and Mission Boulevard in Pacific Beach. They will be housed inside 20-foot by 8-foot converted shipping containers placed adjacent to the full-service restaurants.
Designed for a grab-and-go breakfast experience, the food stand will serve a concise and casual menu that includes a variety of egg-based sandwiches ranging from a Breakfast BLT to a fried chicken sandwich topped with an over medium egg. Eggies will also offer mason jars stacked with strawberry French toast bake or hashed potatoes with egg, bacon, cheese, and chives. Other quick service options include salted cajeta-stuffed churros, Bloody Marys and mimosas.
