Breakfast Gets Interactive in North Park with Griddle-Your-Own Pancakes

Bringing a do-it-yourself sensibility to breakfast and brunch, North Park’s new daytime eatery Flap Your Jacks revolves around a flip-your-own pancakes concept, with griddles installed at every tabletop on which diners can cook up a variety on pancake batter flavors, from classic buttermilk to banana bread and peanut butter, with vegan and gluten-free options available. The pancakes are wholly customizable, with mix-in like chocolate chips and bacon bits, toppings that range from Nutella to whipped goat cheese, and sauces that include blueberry syrup and cinnamon glaze.

Even its University Avenue building, which is shaped like a stack of pancakes with a syrup drizzle, signals the restaurants’ dedication to flapjacks. Inside the two-level space hangs an art installation made up of hundreds of spatulas.

Open daily from 7 a.m. to 3 p.m., Flap Your Jacks also goes beyond pancakes, with a variety of eggs Benedicts, omelets, and scrambles as well as traditional Mexican breakfasts that include chilaquiles and molletes. A lunch menu of salads, sandwiches, and burgers kicks in after 11 a.m. There are juice shots and coffee drinks, as well as full bar pouring mimosas, bellinis, Bloody Marys, and more.

For its grand opening week, which runs until March 15, the eatery is offering a complimentary order of pancake batter per table, with the opportunity to enter an Instagram contest to win free pancakes for a year.
