Entirely Gluten-Free Bake Shop Enters North Park

The Gluten-Free Baking Co. opens its first storefront

Founded by Coronado resident Roanna Canete out of her home kitchen back in 2015, The Gluten Free Baking Co. has since grown to encompass a wholesale business that supplies more than 40 local cafes and restaurants including Communal Coffee, Holy Macha, and Achilles Coffee Roasters and an online shop that offers range of gluten-free baked goods that are also suitable for a variety of other dietary needs, from vegan to soy-free and dairy-free.

The bakery’s first storefront in North Park will be open for previews today and Thursday from 3:30 p.m. to 6:30 p.m. but this Saturday, February 8 at 9:30 a.m. marks its grand opening, with a ribbon-cutting ceremony and free treats. The 385-square-foot space, which replaces The Cake Pop Shop on 30th Street, will have some seating on a sidewalk patio and will feature pastry cases stocked full of the bakery’s completely gluten-free menu which ranges from cookies, doughnuts, and muffins to cinnamon rolls, bagels, and breads.

Open from 11 .m. to 6:30 p.m. Tuesday through Sunday, the shop will also feature pour-over coffee as well as same-day or custom cakes that can be ordered in advance. Canete and cake designer Lisa Altfest (Charm City Cakes), who recently competed on Netflix’s ‘Sugar Rush’, plan to offer cake decorating classes for kids and adults and eventually want to open a dedicated gluten-free baking school.
