Local hospitality group SDCM, which runs Kettner Exchange, The Grass Skirt, Devil’s Dozen Donuts, and Firehouse, will make its first venture into North County with Waverly Restaurant & Lounge, an all-day eatery and bar in the works for the community of Cardiff-by-the-Sea. Currently scheduled to open in early 2020, it takes the place of Rimel’s Rotisserie, which shuttered last month after 10 years.
Waverly will bring a multi-purpose dining option to the neighborhood, offering breakfast, lunch, dinner, and weekend brunch. Planning to open daily at 9 a.m., it will close at midnight Sunday through Wednesday and at 1 a.m. Thursday through Saturday. The menu, created by SDCM corporate executive chef Brian Redzikowski, will include soft poached eggs with spinach, heirloom tomato, serrano chile, and ancient grains, a wild king salmon summer bowl with asparagus, squash, chanterelles and Carolina Gold rice, and Maine lobster ceviche with shrimp chips and cilantro.
A North County firm has been tapped to transform the approximately 3,000-square-foot space. Leucadia-based Design 4 Corners, whose past projects include Van de Vort at One Paseo and Kaito Sushi in Encinitas, will be conceiving the “coastal chic” open-concept dining room and lounge-like surroundings.
