Booming fast-casual brand Cava is scheduled to open at One Paseo next Thursday, July 25 and donating portion of the day’s sales to The Ecology Center. Based out of Washington, D.C., the company operates more than 80 locations across the country; the eatery landed in San Diego last fall, touching down first in Encinitas, and has additional outposts in the works for Mission Valley and The Watermark, a new Scripps Ranch development.
Known for its customizable Mediterranean menu, Cava offers a variety of dips and spreads, proteins, and toppings that can be layered in salads, grain bowls, and pita pockets; options range from roasted red pepper hummus to tzatziki, falafel, spicy lamb meatballs, and cauliflower quinoa tabbouleh. Its seasonal specials for summer include white bean salad with fresh herbs and lemon and a spicy lentil soup.
Open daily from 10:45 a.m. to 10:00 p.m., the 2,160-square-foot, 62-seat One Paseo restaurant has an outdoor patio and a dedicated pick-up zone for online orders.
