A new eatery focused on the unique fusion of Mexican-style seafood with sushi rolls has just opened up in Vista. Culichi Town operates 16 eateries across California, the Southwest, and Illinois, specializing in a particular hybrid of sushi that began developing in the early 2000s in the city of Culiacan, part of the coastal Mexican state of Sinaloa. It originated with local cooks, who returned to Mexico after working in Japanese restaurants in the United States, bringing with them sushi recipes and techniques that they adapted with regional ingredients. Fried fish and octopus feature in the popular rolls, as well as steak and chicken.
The menu also includes other Mexican seafood dishes, from lime-cured aguachiles to tacos, and tostadas. The full bar pours tequila, beer, micheladas and more.
A rep at the Vista outpost, which is open every day from 8 a.m. to 11 p.m., told Eater that the group may be adding another location in San Diego County.
