Flip-Your-Own Pancakes Spot Getting Close in North Park

Flap Your Jacks is due by late summer

North Park’s newest, and largest, breakfast haunt is arriving in late summer with an emphasis on interactive morning eats. Flap Your Jacks’ University Avenue storefront will spotlight its featured dish, with a facade designed to resemble a stack of pancakes that comes complete with a crowning drizzle of syrup. Inside, guests will be greeted by a custom art installation made from thousands of hanging spatulas.

The modern, light-filled space will be done in natural wood with greenery and planters placed throughout the restaurant. Open daily from 7 a.m, to 3 p.m., the 4,200-square-foot, 180-seat eatery, which includes a mezzanine seating area, will have griddles on all its tables where diners will be able to cook their own personalized pancakes, choosing from different toppings and flavors of homemade batter which will also be available in vegan and gluten-free options. But the menu will offer more than just pancakes, extending to omelets, frittatas, and eggs Benedicts plus Mexican breakfast and brunch plates like chilaquiles, huevos rancheros, and mole enchiladas. A full cocktail bar will mix up boozy brunch drinks as well as fresh squeezed juices and health-focused “energy shots”.
