Three years into its tenure at the Village at Pacific Highlands Ranch, Westroot Tavern is changing hands in advance of a remodel that will reposition the restaurant. The Cohn Restaurant Group (CRG) has acquired the Carmel Valley eatery from the Verant Group, and will take ownership of the space on July 1.
A revamp will follow, taking place over the course of 10 weeks with no disruption to restaurant operations. Though it’ll retain a family-friendly atmosphere, the two-level space will get a top-to-bottom renovation from Los Angeles’ Borisoff Design Studio, whose work with the sbe Entertainment Group includes SLS Hotels, Mondrian Hotels, Katsuya, and Jose Andres’ Bazaar Beverly Hills, Bazaar Meat, and Bazaar Mar.
All changes to the yet-to-be-renamed restaurant are scheduled to be completed by September. Its new menu, by chefs Daniel Wolinsky and Doug Dellaccio, is still in development; Wolinsky recently joined the CRG team, having previously cooked at Cucina Sorella in Kensington.
