This Monday, May 13 will mark the release of the second concept menu and cocktail book at George’s at the Cove’s Level2 bar in La Jolla, where from 5 p.m. to 11 p.m., the bar will be mixing up its new lineup of cocktails for $4 off the regular price and running happy hour specials all night. This follows George’s first hardbound cocktail book, which debuted in late 2017 and featured drinks inspired by local neighborhoods.
Entitled Flora of San Diego, it features 24 original cocktail recipes that make up the bar’s new menu; the book will also be available for purchase for $30. Created by general manager Sam Peters and assistant general manager Christian Ortiz, along with the Level2 team including lead bartender Cole Shepherd, each drink highlights local flora, from citrus and lavender to nasturtium and nopales; the book features botanical illustrations alongside scenic imagery of San Diego and photos of every cocktail.
Peters’ contributions include the Sage Swizzle 2.0, a revamp of an earlier drink called the Sam Swizzle that has been rebuilt to highlight its sage component. Other cocktails include the Shiso Piney, a gin-based drink made with a pine tincture, The Last Kumquat which blends Appleton Estate rum with a house kumquat cordial, and the House Dirty Martini with celery brine.
