With three locations in Orange County, The Butchery lands in San Diego as the latest arrival at One Paseo in Carmel Valley. The full-service butcher shop, which was founded a decade ago in Costa Mesa, specializes in everything from choice and prime beef to premium dry-aged beef, wagyu, bison and venison, plus pork, poultry, and seafood. It’s also known for its marinated ready-to-cook meats and as housemade sausages.
In addition to an extensive grocery section, deli, and beer and wine shop, the 5,000-square-foot space also has an on-site eatery and bar that will offer a menu of cold sandwiches, from classic Italian to roast beef based on flatbread from acclaimed North County bakery Prager Brothers, and hot sandwiches ranging from house-marinated steak tips with grilled onions and peppers to Italian sausage with goat’s milk cheddar.
Open daily from 9 a.m. to 7 p.m., the One Paseo store is holding a grand opening celebration on Saturday, May 18 from 11 a.m. to 4 p.m.; there will be live music and samples available from the market’s purveyors, including Snake River Farms, Aniata Cheese Co., and Nueske’s Bacon. And look for The Butchery to expand its footprint in the area; co-founders Robert Hagopian and Brian Smith have expressed interested in opening another location closer to downtown.
