Building on the popularity of its bustling locations in Westfield UTC and the San Diego State University campus, Eureka! is planning to open its first North County outpost this spring. Currently scheduled to debut on April 29 in the Carlsbad neighborhood of Bressi Ranch, the eatery will be an anchor tenant of Lift, a new mixed-use development from RAF Pacifica Group that combines office space with ground floor hospitality tenants.
The 5,000-square-foot restaurant will have seating for 184 diners, and will include a bar fronted by green glazed tiles and a patio with an outdoor fireplace. Known for its decadent burgers, including the Bone Marrow Burger with shiitake bone marrow butter and the Fresno Fig Burger with fig marmalade, melted goat cheese and bacon, Eureka! also serves beer-friendly snacks such as Lollipop Corn Dogs and Mac N’ Cheese Balls and offers brunch on weekends from 10 a.m. to 2 p.m. Beverages are a big focus, from 30 taps of local beer to cocktails and an impressive spirits collection that includes over 40 small batch whiskeys and hard-to-get bottles like the cult-classic Pappy Van Winkle.
The Carlsbad location will be open Monday through Wednesday from 11 a.m. until 11 p.m., Thursday to Friday from 11 a.m. to midnight., Saturdays from 10 a.m. to midnight and Sundays from 10 a.m. to 11 p.m. with a daily happy hour, weekend brunch, and live music on Thursdays.
