Tender Greens is the next restaurant to activate at One Paseo, joining Shake Shack, Salt & Straw Ice Cream, and Susie Cakes as part the first wave of eateries to land at the Carmel Valley development, which will ultimately hold close to 20 distinct food and drink concepts. Grand opening Monday, April 1, this is the 30th location for the “fine-casual” company, which was founded in 2006 and runs four other outposts in the San Diego area. Open daily from 10 a.m. to 9 p.m., the 100-seat One Paseo branch will be giving away prizes to the first 50 people in line on Monday; the swag includes signed NFL merch, free food, and the ultimate prize of free Tender Greens for a month.
Each location has its own executive chef; in charge of One Paseo is Hani Hindi, who transfers from Tender Greens Mission Valley and has logged seven years with the company; Hindi will be creating frequent daily specials to augment the eatery’s main offerings. The menu was just updated with new dishes that include a Mediterranean steak salad, a grilled salmon bowl, and a salumi sandwich made with cured meat from Tender Greens’ VP of Stores Pete Balistreri’s eponymous salumi line.
