Sushi, Beer, Juice, and French Pastries Round Out One Paseo

The North County complex is almost here

The first wave of food retailers will touch down as soon as March at One Paseo, the Carmel Valley mixed-use development that includes almost 100,000-square-feet of restaurants and shops. The unveiling of its eateries and retailers will be followed by the launch of over 600 luxury apartments and more that 280,000-square-feet of offices.

Nearly all of the complex’s 40-plus spaces have been spoken for, by a mix of local and national names that include Shake Shack, Salt & Straw, Tender Greens, and Blue Bottle Coffee. The latest leases to be announced feature a new eatery from the owner of Tomoyama Sushi, which has operated in Carlsbad’s Plaza Paseo Real since 2008. Called Mizukiyama Sushi, it’s expected to serve sashimi and sushi as well as a range of Japanese dishes including udon, yakisoba, teriyaki, and donburi. One Paseo will also house another outpost of Juice Crafters, the juice bar with locations throughout Los Angeles and San Diego including Little Italy and Coronado. Also expanding is Le Macaron French Pastries, national franchise with cafes in La Jolla and Carlsbad that specializes in gluten-free French macarons in over 20 flavors but also offers French pastries, ice cream, cakes, and candy.

They will be joined by a tasting room from Harland Brewing Co., a budding brewery by Saint Archer alums that’s also building a production facility in Scripps Ranch.
