There are still more eateries entering the One Paseo complex; the latest, Tocaya Organica, is scheduled to grand open on Wednesday, December 18 with an event running from 11 a.m. to 9 p.m. that will include live entertainment, food specials, and giveaways. Founded in 2016 by The Madera Group out of West Hollywood, there are 17 locations of the eatery throughout Southern California and Arizona including existing outposts at Westfield UTC and the Gaslamp.

The One Paseo restaurant, which spans a 2,900-square-foot interior and a 1,900-square-foot patio, include an indoor/outdoor bar feature and fireplace lounge. Its modern Mexican menu of salads, tacos, bowls, and burritos caters to the full range of dietary needs, with plenty of vegan, vegetarian, and gluten-free options. The rapidly-expanding eatery’s best-sellers include the Tocaya Salad with a spicy cilantro-lime dressing and the Fajita del Rey Bowl made with sautéed peppers and onions, cilantro-lime rice, black beans, and vegan chipotle crema; newly released is a breakfast burrito that folds organic eggs, black bean puree, tri-color peppers, caramelized onions, poblano peppers, and tomatillo salsa into a flour tortilla.
