Named 2018 Restaurateur of the Year by the California Restaurant Association’s San Diego Chapter, Chuck Ross is a 40-year veteran of the industry who runs several prominent Mexican restaurants and shops within Old Town San Diego State Historic Park under his Old Town Family Hospitality Corporation banner, including Casa de Reyes, Barra Barra Saloon, and The Cosmopolitan Hotel & Restaurant in Old Town. With his sons and daughter-in-laws, who have been long been involved with his restaurants’ operations, Ross is launching a new company called All Family Hospitality LLC whose first project is headed for Oceanside.
Carte Blanche Bistro & Bar will be one of the anchors of downtown Oceanside’s new luxury mixed-use development SALT, which will also house an all-day eatery and cafe from Indiana’s Proper Doughnuts and Proper Coffee.
Described as “modern Mexican-meets-French farm house”, the 4,300-square foot, full-service restaurant will feature an open floor plan and a full bar. Due this December, Carte Blanche will open with executive chef Alex Carballo at the helm. A well-known local chef, Carballo’s culinary career spans 15 years in San Diego, during which he ran the kitchens at Stone Brewing World Bistro & Gardens, Indigo Grill, and The Brigantine and consulted on a number of local concepts including Casero Taqueria, Clara, Moto Deli, and Sisters Pizza.
