Salt & Straw Ice Cream will open a second San Diego scoop shop in Carmel Valley’s new One Paseo complex sometime next year. The family-run, Portland-based company landed Little Italy last December — co-founder and CEO Kim Malek says it was their most successful opening to date — and has been continuing a steady West Coast expansion.
The Carmel Valley store will be Salt & Straw’s first in a mixed-use development of this kind; located at the corner of Del Mar Heights Road and El Camino Real, One Paseo spans a 23-acre lot and features 95,000-square-feet of retail space. But Malek says they were drawn by the caliber of eateries that have already signed up as tenants, including Shake Shack, Tender Greens, and San Francisco’s International Smoke. Salt & Straw’s ice cream parlor will measure 1,314-square-feet, with plenty of seating available throughout various public plazas.

Malek’s cousin Tyler, the company’s co-founder and head ice cream maker, will head up its menu of core flavors, including Sea Salt with Caramel Ribbons, as well as monthly seasonal creations that have been inspired by dishes from notable chefs and inventions from elementary school kids.
