Butcher Shop, Juice Bar, and Italian Eatery Joining North County’s One Paseo

Previously-announced tenants include Shake Shack, Tender Greens, Sweetfin Poke, and more

From homegrown eateries to globally-known brands, the ever-growing culinary lineup currently signed for One Paseo could make it a serious dining destination for North County. The mixed-use complex, located at the southwest corner of Del Mar Heights Road and El Camino Real in Carmel Valley, is scheduled to launch Spring 2019; in addition to nearly 100,000-square-feet of retail space, the development includes public plazas, 280,000-square-feet of offices, and 608 residential units.

Announced earlier this year as its first tenants were San Francisco’s acclaimed International Smoke, a restaurant partnership between celebrity chefs Ayesha Curry and Michael Mina, along with seafood spot Ways & Means Oyster House and Los Angeles transplants Tocaya Organica and Sweetfin Poke. La Jolla eatery Parakeet Café subsequently joined the mix in addition to two big names from the culinary world — burger star Shake Shack and leading fast-casual eatery Tender Greens.

Among a new trio of food and beverage options is Orange County favorite The Butchery. With locations in Costa Mesa, Brea, and Newport Coast, the full-service butcher shop offers hand-cut top choice and prime beef, grass-fed beef, all-natural pork, and poultry as well as specialty meats ranging from dry-aged beef and wagyu to bison and venison. Locally-made sausages, artisan cheeses, and house-marinated meats will stock the deli case. The store will also make fresh sandwiches and sell gourmet grocery items, including craft beer and wine.

The Instagram-ready Joe & The Juice gives a stylish Nordic spin to the juice bar/coffee shop combo. Founded in Copenhagen, Denmark, the fast-growing brand counts nearly 250 locations worldwide with more than 70 more stores opening this year. The menu offers coffee, tea, and sandwiches along with fresh juices, smoothies, and virtuous veggie shots.

Rounding out the roster is North Italia, a new-to-San Diego eatery from Fox Restaurant Concepts (True Food Kitchen, Flower Child) which recently announced another location coming to the Fashion Valley Mall. The modern Italian restaurant specializes in a scratch-made, seasonal menu of classic Italian dishes that range from braised beef short rib with roasted root vegetables and creamy white polenta to prosciutto pizza with mission fig, goat cheese and arugula.
