The owners of Kearny Mesa’s new show-stopping cocktail den, Realm of the 52 Remedies, as well as beer bar Common Theory, are continuing their contributions to Convoy with a Korean eatery that’s currently scheduled to open at the end of January. Woomiok is being spearheaded by co-owner Joon Lee, who came to the U.S. from Korea at 16-years-old. Citing a lack of specialty Korean restaurants in San Diego, Lee says Woomiok’s menu revolves around classic Korean seolleongtang, a fortifying soup made from a long-simmered broth of beef bones. He’s working with additional partners who are also from Korea and will share their time-tested recipes.
Served in a clay pot, the soup features a rich and milky broth and will be available with various cuts of meat, from ox tail to brisket. The concise menu will extend to a few other traditional Korean soups, including spicy beef soup and galbitang, a clear soup made from short ribs. The eatery will also make its own kimchi and offer a few varieties of banchan, or side dishes.
