The Butchery Quality Meats is venturing outside of Orange County, where it will be part of the notable, ever-expanding lineup headed for One Paseo. The full-service butcher shop was founded in Costa Mesa in 2009, and also operates locations in Newport Coast and Brea. It will offer an array of hand cut top choice and prime beef, grass-fed beef, pork, and poultry as well as specialty meats including dry-aged beef, American and Japanese wagyu, bison and venison. The shop is also known for its marinated meats and sausages, including marinated steak tips, tri-tip and Italian sausage with goat milk cheddar. All new for the North County store is a fresh seafood case.
The 5,000-square-foot space will also include a large grocery area, a deli case of cheese and charcuterie, and a retail section for craft beers and wines. Aiming to open by February 2019, The Butchery outpost in One Paseo is its first with a full kitchen and expanded seating area. The on-site eatery and beer and wine bar will serve a casual menu based on its core products, from burgers and chicken sandwiches to steaks and sausages. Co-owners Robert Hagopian and Brian Smith tell Eater they’re looking to do one more location in San Diego, perhaps closer to downtown.
