Liberty Public Market’s Paraná Empanadas Expanding to UTC

It’ll debut by the end of February

Paraná Empanadas, which began as a local farmer’s market vendor eight years ago, is opening a second brick-and-mortar location and will be part of the new and improved food offerings at Westfield UTC. Run by Lucia Landman and her parents, the company still operates at farmer’s markets in San Diego and Orange County but launched its first storefront last March as one of the founding food vendors at the Liberty Public Market. Paraná will be located in a stand-alone kiosk at UTC and is scheduled to open by the end of February.

The family, who moved from Argentina 17 years ago, created a menu of fresh-baked empanadas stuffed with everything from chipotle chicken to a blend of cheeses or a mix of mushrooms. Landman says that all the food offerings from Liberty Station will transfer over, including their chimichurri sauces, yerba mate drinks and dulce de leche-based desserts. Different flavors of empanadas will eventually be rotated in.
