The team behind Trust Restaurant, a 2016 Eater Awards winner for Best Neighborhood Trailblazer, will open Hundred Proof on Tuesday, June 27. Building on the “trust” earned by the overwhelming success of the first restaurant, its key players are now expanding their reach further north on Park Boulevard, where their new cocktail bar with food will debut in the former S&M Sausage & Meat space.

Lending their talents to the launch are executive chef/partner Brad Wise, pastry chef Jeremy Harville, and managing partner Steve Schwob with a special spotlight on bar manager Juan Sanchez, whose bar program at Trust has become a local standout. A 14-year vet of the industry, Sanchez has created a drink menu that ranges from boilermakers — a shot and a beer — to a well-rounded craft cocktail list focused on shaken and refreshing . There are also playful takes on booze, ranging from a slushy mule to spiked milkshakes and “bottle service” for groups that pairs 375ml bottles of spirits with a six-pack of beer.

Wise’s all-day menu is straightforward bar food lifted up by chef technique; there’s braised beef nachos, baked crab dip, crispy chicken oysters with Korean sauce and truffled mac and cheese with bone marrow, plus an array of pizza. And Harville’s desserts range from doughnuts, cream puff and churros paired with milkshakes to a banana split built for four.

Hundred Proof will initially be open from 3 p.m. to close, with a weekday 3 to 6 p.m. happy hour. Starting in early July, the bar will open daily for lunch service, with brunch on Sundays. An adjacent parking lot attached to a church will be available for customer parking in the evenings.
