Texas Transplant Cowboy Chicken Finds First Location

More outposts for this wood-fired rotisserie chicken chain are in the works

Eater has learned that Cowboy Chicken, is heading to Rancho Bernardo, where it will join Karl Strauss Brewing Company and Napizza in the 4S Commons Town Center. The fast-casual concept, which was founded in Dallas over 35 years ago, announced earlier this year that it would expand significantly throughout California with the aim of bringing four to six locations to the San Diego area. The popular quick-service, which has more than 20 outposts throughout Texas and the South, is known for its menu of wood fired rotisserie chicken, sandwiches, Tex-Mex chicken enchiladas and housemade sides.

Cowboy Chicken’s Phil Fontes tells Eater that the Rancho Bernardo restaurant should be open in six months. Together with Location Matters’ Mike Spilky, Fontes is also working on lease commitments for Cowboy Chicken in the Mission Valley, Carlsbad and Encinitas neighborhoods. .
