Making its debut Friday April 7 in Westfield UTC’s food court is Bibigo Fresh Korean Kitchen, the global brand of fast-casual eateries, which also has it own line of packaged foods. With several locations in the Los Angeles area, and an ambitious growth plan to launch 130 locations nationwide by 2020, the 700-square-foot is the company’s first in the San Diego market.
Specializing in a traditional rice bowl called bibimbap, Bibigo offers build-your-own meal options starting with your choice of a classic bowl or hot stone pot that’s built on a base of white, brown or kimchi rice, noodles or salad and toppings that range from vegetables to grilled meat, including bulgogi beef or spicy pork, plus signature sauces and garnishes ranging from a fried egg to crispy garlic. On grand opening day, from 11 a.m. to 3 p.m., diners can try a free bowl of bibimbap by following the eatery on Facebook, Twitter or Instgram. Bibigo will also be giving away prizes, including bottle of its housemade sauces.
