Napizza Bringing Fast-Casual Roman-Style Pizza to Encinitas

Homegrown fast-casual concept Napizza has announced that it will open its fourth location next month in Encinitas. Co-owners Giulia Colmignoi and Christopher Antinucci live in North County but hail from Rome; their popular pizzeria, which also has outposts in The Hub in Hillcrest and 4S Ranch’s 4S Commons Town Center, is centered around pizza al taglio, a Roman specialty which is cooked in rectangular pans and sold in square slices or whole pies.

Made with a dough that rises for 72 hours before baking, with flour and yeast imported from Rome, the pizzas are cooked in Roman pizza ovens with gourmet seasonal toppings. The menu also includes salads, with organic greens and produce sourced from local farms. Chef Alessio Poli will be master pizzaiolo of this location, which will be the first Napizza to offer pizza-making classes for adults and kids.

The 1,400 square-foot location, designed by Colmignoli, will seat 48 diners in a sleek space built with white brick, reclaimed wood and black steel; the Encinitas eatery will be 3 Star Green Certified and offer delivery via electric bike to the downtown Encinitas area.
