Peek Inside Provisional, The Pendry’s All-Day Eatery

Now softly serving the hotel’s first guests, Provisional at Pendry San Diego is gearing up to welcome the dining public this weekend into its light-filled stylish space that’s centered by a handsome open kitchen. As the property’s all-day food and drink venue, Provisional starts mornings in the cafe section with a coffee bar fueled by Vittoria Coffee and breakfast bites, transitioning to serve lunch dishes ranging from chopped kale salad and prosciutto pizza, followed by an evening menu of shareable dishes, including a meat and cheese board, to pair with a list of wines available by the glass, carafe or bottle.

Chef Chris Osbourne, who recently departed Cowboy Star after a long and respected tenure, created the menu for this restaurant as well as the adjacent lobby bar and oversees in-room dining. His lunch and brunch menu for the dining room includes roasted sunchoke bisque with seasonal crab, sunflower seeds and citrus bernaise and Snake River Farm flank steak and frites with bordelaise sauce while dinner offering range from pan roasted sea bass with tomato jam, local radishes and tamarind clam sauce to Japanese Hokkaido A5 Wagyu New York steak with maitake mushrooms, braised greens, bonito bordelaise and marrow compound butter.
