Draft Republic Coming to Carlsbad This Summer

Bringing housemade sausages, beer & games

Just over two years ago, the Cohn Restaurant Group added Draft Republic to its restaurant portfolio, opening the flagship location at the end of 2014 in the UTC area. The craft beer concept, featuring an all-American design rendered in a palette of red, white and blue with industrial and custom vintage elements by Philippe Beltran, featured a pub-inspired menu from New Zealand native and executive chef Mike Camplin that showcased his considerable expertise in sausage and charcuterie-making.

Now, the Cohns are taking their beer-focused restaurant north with Beltran and Camplin in tow to launch a second Draft Republic in Carlsbad at a coastal site that previously held a Claim Jumper. Anticipated to open this summer, the 11,300-square-foot eatery will have a similar foundation to the original, with an in-house charcuterie and sausage program and a tap list of over 100 craft beers, plus wine and cocktails, served in a warehouse-like setting conceived by Beltran. With seating surrounded by entertainment in the form of retro arcade games and classics like ping-pong, foosball and billiards, the Carlsbad site will also cater to the serious sports fan with more than 40 TVs and two huge video walls for optimum viewing capabilities.
