Perched above the Pacific Beach boardwalk is Waterbar, a new 6,700-square-foot bar and restaurant that’s scheduled to open next month. The beachside eatery, which replaces Joe’s Crab Shack, has been in the works since last year. It’s team of owners, local restaurateurs Todd Brown (Bub’s at the Beach, Blind Burro) Eric Leitstein (Union Kitchen + Tap, PB Alehouse) and Joe Vaught (Barleymash, Sandbar) have been remodeling the space to capitalize on its panoramic ocean views; the lounge-like dining area will include two large bars serving craft beer, wine and cocktails.
Executive chef Steven Lona last ran the kitchen at Tasting Room Del Mar, where his menu was defined by seasonal ingredients. Lona will continue to support local purveyors at Waterbar, which will offer dishes based around “social seafood”. Also on board are general manager/sommelier Brent Noll and bar manager Brian Gaudet (The Hake, Searsucker Del Mar).
