Breakfast Republic just cracked open its sixth location in Carmel Valley last week and is prepping to launch its seventh in Pacific Beach, but the rapidly-multiplying breakfast eatery is already announcing plans for more North County expansion; it will open May 2018 at The Shoppes at Carlsbad. Breakfast Republic has an existing outpost in Encinitas, but the Carlsbad branch will be the first inside a retail mall, which is also the future home of Lucha Libre Gourmet Taco Shop.
Run by Rise and Shine Restaurant Group, which also operates three Fig Tree Cafés, Breakfast Republic founder and owner Johan Engman is also launching Pizza Republic and North Park Breakfast Company as well as El Jardin in Liberty Station with Claudette Zepeda-Wilkins, the group’s R&D chef and a cheftestant on the next ‘Top Chef’. Known for its comforting breakfast classics, from Oreo pancakes to shrimp and grits and breakfast bacon mac n’ cheese, the morning-focused eatery is also a popular spot for daytime drinking thanks to its craft beer taps and eye-opening cocktails.
