This fall will usher in a highly-anticipated crop of new eateries at Westfield UTC, including a second location of True Food Kitchen, whose first San Diego restaurant opened in Fashion Valley in 2012. Founded in 2008 by acclaimed restaurateur Sam Fox and integrative medicine expert Dr. Andrew Weil, the health-focused eatery now has 21 branches across the country. Serving lunch, dinner and brunch, the restaurants feature a regularly rotating menu centered around seasonal ingredients that includes vegan, vegetarian and gluten-free options and cocktails based on fresh fruit.

Its new UTC outpost is due to open on Saturday, November 18 and will span 9,000-square-feet, encompassing a 200-seat dining room and open kitchen plus a 44-seat outdoor patio. The eco-minded design includes planters filled with fresh herbs, chairs made from recycled soda bottles and reclaimed wood floors. In preparation for launch, the restaurant is conducting a job fair to fill approximately 130 open positions. Upcoming open sessions, held at True Food Kitchen Fashion Valley, are scheduled from 10 a.m. to 6 p.m. October 16 through 21 and October 23 to 28.
