Draft Republic’s Second Location Brings 101 Taps to Carlsbad

The latest Cohn Restaurant Group project will feature house made sausages

After three years in La Jolla’s UTC neighborhood, Draft Republic is opening its second location in Carlsbad on Friday, October 13 at 3:33 p.m. The Cohn Restaurant Group gastropub is known for its extensive tap list—the Carlsbad location will have 101 taps with strong San Diego representation. Also on offer will be rarer finds from breweries in Japan, Germany, England and Holland. The cocktail program will include tiki drinks, a Japanese whiskey Samurai Old Fashioned and three beer cocktails.

Executive Chef Mike Camplin will reproduce the in-house sausage production started at the first Draft Republic and will feature new additions like grilled New Zealand lamb chops, a banh mi “ramen” burger and four different flatbreads.

Clocking in at a sprawling 12,000-square-feet, the open-concept space boasts 50 televisions, ping pong, billiards, video games wraparound booths, outdoor picnic tables, communal seating and high tops. It was designed by the restaurant group’s resident designer, Philippe Beltran, who has also outfitted Coin Haus, BO-beau kitchen + bar, Indigo Grill, BO-beau kitchen + cache and Libertad. Draft Republic Carlsbad will be open 11 a.m.- 10 p.m. from Sunday to Thursday and 11 a.m.-midnight on Friday and Saturday.
