Aften ten tremendous years in San Diego, Christian Graves will soon leave his executive chef post at Jsix. His last day at the East Village restaurant is June 5 and Graves and his family will be relocating to Denver, Colorado this summer.
Graves arrived in San Diego a decade ago from San Francisco, where he worked in some of the city's top restaurants, including Farallon and Aqua. Taking on the signature restaurant at the Kimpton Hotels & Restaurants' Hotel Solamar, the chef walked the walk with his true dedication to farm-to-table cooking at Jsix, where the from-scratch kitchen made everything from charcuterie and beer. Carrying his seasonal sensibilities right on through Jsix's refresh in 2014, Graves has also been one of our best chef collaborators, often hosting guest chefs for events and dinners.
The chef, who was once named San Diego's hottest, told Eater that he is helping to select a replacement of high caliber at Jsix. As for his next adventure, Graves says that he has not signed up for a new gig just yet, but may stay with the Kimpton group or explore other options in Denver.
