ENCINITAS— Chef Alex Carballo is still prepping his gourmet sandwich shop, Moto Deli, set to launch this April. But before the brick-and-mortar location opens, Carballo has rolled out a Moto Deli Food Truck to give North County a taste of what's to come. The truck will be parked at the site of the eventual eatery at 810 North Coast Hwy 101 from 11 a.m. to 2 p.m. every Thursday and Friday and it will also hit the road, with scheduled appearances at the upcoming El Cajon Craft Beer Invitation and Mission Valley Craft Beer & Food Festival, plus stops at local brewery tasting rooms.
