Perfecting the art of melty cheese between toasted bread since 2011, Grater Grilled Cheese started as Greengo Food Truck before owners Gaston Corbala and Natalie Garin opened their first brick-and-mortar in downtown La Jolla in 2014. Earlier this year, the couple launched a second eatery in Mission Valley, where they offer an extended menu plus beer and wine.
The food truck is still in operation as Grater Grilled Cheese’s mobile catering unit, but a third storefront for the concept is headed to North County where it will slot in next to Village Mill Bread in the Del Mar Highlands Town Center complex. Serving its signature menu, which ranges from the Basic 5-cheese blend to a Puerto Nuevo-inspired version with butter-fried lobster and snow crab, the eatery is scheduled to open sometime in the first quarter of 2017.
