The Galaxy Taco team has started to share construction photos from the beachside community of La Jolla Shores, where they are transforming part of a neighborhood market into a new, modern taco-centric eatery that will be the long-awaited second project from the owners of the iconic George's at the Cove.
Executive chef and partner Trey Foshee sent over an update, saying that the food and drink menus are in the refining stage, with a mid-June opening date projected for the Mexican-inspired restaurant. Chef de cuisine Christine Rivera was plucked from George's ranks to lead Galaxy's kitchen, where the pride of joy will be a $10,000, custom made grinder that'll be fed non-GMO, heirloom-variety corn to make masa for their house tortillas and other menu items. Rivera recently spent time in New York City, where she staged at Enrique Olvera's white-hot, James Beard Award-nominated Cosme. George's California Modern's Mark Broadfoot is heading the bar program, which will revolve around all things agave. Though there have been rumors that Galaxy would also be setting up elsewhere in town, Foshee says they are planning to do just one location of the casual restaurant.
