After the success of three Fig Tree Cafe locations, restauranteur Johan Engman is expanding his empire with more morning meals. The Fig Tree eateries serve breakfast, in addition to lunch and dinner, but Engman wants a.m. fare to be the focus of his latest project, Breakfast Republic.
"If I've learned one thing, it's that simplicity is better ..." he told Eater, "I wanted to hone in on one thing and do it right — and I'm in love with breakfast." Engman thought the hip North Park neighborhood would be perfect for a pre-dinner establishment.
Engman developed the menu and says it will feature French toasts, pancakes, scrambles, and items with a more extrinsic flair, like a Vietnamese chicken wing bowl or a Southern shrimp and grits. Guests will have 20 draft beers to choose from, kombucha on tap, and other unique beverages.
There aren't any peeks at the Breakfast Republic interiors yet, but Engman promises a wall emblazoned with the cheeky phrase "Run Cock Run." (The restaurant's logo is a rooster). Imagine the Instagram possibilities.
Breakfast Republic is looking at late June for their opening at 2730 University Ave. The daytime diner will be open from 7 a.m. to 3 p.m.
