Among the proposed tenants that have been mentioned in conjunction with the new One Paseo development, including Puesto and True Food Kitchen, is a Chicago-based concept with seven locations in Chicago, Minneapolis, Kansas and Washington DC.
Pinstripes founder/CEO Dale Schwartz tells Eater that the company has been looking to expand into California for over five years; besides the North County spot, they're also in active discussions in the San Francisco and Los Angeles areas.
The sprawling food and entertainment venues encompass an Italian-American bistro serving a menu of pizza and flatbreads, salads and housemade pasta, plus bowling lanes and indoor/outdoor bocce courts, patios, fire pits and multiple event space.
The two-story San Diego location, which will span 10,000-square-feet on the ground level and 20,000-square-feet on the second floor, isn't scheduled to be complete until late 2017 or early 2018; between now and then, Pinstripes will launch in several other cities, including Dallas, Nashville, Cleveland and Denver.
