At long last, The Heart & Trotter has set a date to debut the new storefront for their North Park-based butchery; the shop will open this Saturday, March 7 at 2855 El Cajon Blvd suite #1.
Eater's been tracking The Heart & Trotter since Fall 2013, when the company's founders, James Holtslag and Trey Nichols, launched an extraordinarily successful Kickstarter campaign which raised over $50,000 in donations, with rewards ranging from meat samplers to sausage-making classes.
At last month's BLVD Market, which takes place in the parking lot in front of the butchery, Heart & Trotter previewed the storefront and served plates of pig head terrine and smoked blood sausage, which will be one of their signature housemade sausages.
Head butcher Holtslag will be breaking down whole animals to retail at the store, stocking lamb, beef, chicken and pork and occasionally offering duck and rabbit.
Eventually, the shop hopes to install an outdoor patio and offer beer, wine and more substantial food. A grand opening is scheduled for March 14 at 3 p.m., when The Heart & Trotter will be roasting a whole pig and serving up pork tacos.
