Paul McCabe Returning from Arizona to Relaunch Local Resort

The well-regarded chef heads back in the San Diego scene.

After departing San Diego in 2013 to move back to his home state of Arizona to take on the executive chef post at T. Cook's at Phoenix's Royal Palms Resort and Spa and help Destination Hotels & Resorts to relaunch the signature restaurant, Paul McCabe will soon be back in a local kitchen.

McCabe, who was instrumental in establishing the culinary pedigree of KITCHEN 1540 at the L'Auberge Del Mar (another Destination Hotels property), is returning to help the company reboot yet another of their holdings, Hotel Circle's Town & Country Resort & Conference Center.

According to the Phoenix New Times, McCabe will leave the Arizona restaurant later this spring. George Morris, a recently-transplanted San Diego chef who joined McCabe there last fall, will remain as T.Cook's chef de cuisine.

When reached this afternoon, McCabe said, "I'm excited to be working with Mike Slosser (Vice President & Managing Director of Destination Hotels) again and putting a team together to reposition the resort. We are planning a $75 million renovation and building several new restaurants. And of course I'm excited to meet up with all my chef friends and eat at some of my favorite spots again...I've really missed San Diego!"
