Executive chef/partner Trey Foshee says that Galaxy Taco will be putting a different spin on its weekly Taco Tuesdays starting in 2016. The La Jolla Shores restaurant, which just began selling its house made Oaxaca white heirloom corn masa for tortillas through the restaurant and Specialty Produce, will launch a new weekly Taco Tuesday Takeover in January, when guest chefs will share the kitchen and create three featured tacos, which will be offered along with Galaxy's full dinner menu.
NINE-TEN executive chef Jason Knibb will kick the series off on January 5, followed by CH Projects' executive chef/partner Jason McLeod on January 12. Among the other notable chefs signed on are San Diego resident and James Beard Award winner Nate Appleman, who's scheduled to cook on January 26, and Encinitas native Matt Orlando, who was head chef at Copenhagen's legendary Noma before opening his own acclaimed restaurant, Amass in the Danish capital; Orlando will be in town on February 9.
Foshee says that future Taco Tuesday Takeovers may not be limited to culinary professionals; he could sign up other taco-loving creatives, from musicians to brewers, for guest cooking stints.
