Foie Extravaganza; Chef Collab Dinner; Jsix Cooking Classes

Celebrating "foiedom", collaborating chefs and cooking with a pro.

BAY PARK/BAY HO— The "foiedom tour" continues with the second of two seriously indulgent foie-themed events put on by a gang of local chefs. The lineup has just been announced for the dinner scheduled for Monday, February 2, which will be held at Kitchen 4140. A gaggle of San Diego chefs, including Kitchen 4140's owner/exec chef Kurt Metzger, Chad White (Comun Kitchen + Tavern), Karen Blair (Hamilton’s Tavern, Small Bar and Monkey Paw Pub & Brewery), Nicolas Bour (Lowes Coronado Bay Resort) and Miguel Valdez (100 Wines), will pair up for a six course all-foie dinner that'll begin at 6 p.m. in the restaurant's private dining room. MIDDLETOWN— On Wednesday, February 4, The Fishery's Paul Arias is headed to Wine Vault & Bistro to join his former chef-colleague (they worked together at The Fishery and The Lodge at Torrey Pines) Gregory Chavez in his kitchen for a chef collaboration that will feature a five course seafood dinner with a twist - each savory dish, from salmon "bacon"-wrapped monkfish with buttermilk-smashed kohlrabi and red wine-braised mushrooms to swordfish meatballs with roasted spaghetti squash and pumpkin seed pesto, will be paired with red wine. EAST VILLAGE— Next month, Jsix chef Christian Graves will launch a new series of Monday night cooking classes starting at 6 p.m. that include hands-on instruction, an entree from the chef and two "dealer's choice" drinks from the bar for $40. On February 9, Graves will be leading the class in gnocchi preparation and on February 23, you can learn how to make and cook with fresh ricotta. [EaterWire]
