Rubio's to Makeover California Stores, Change Branding

The fast-casual chain is rolling out a new look.

In 1983, Rubio's opened it first walk-up stand near Mission Bay; now 31 years and 200 restaurants later, it's due for a little makeover.

The fast-casual chain just announced that it plans to renovate 60 of its stores in California; the first to get spiffed up was their Carmel Mountain Ranch location, which has a new modern design and a beach-inspired palette.

Next to go under the knife is the Nordahl location in San Marcos and their outpost in the UTC food court, which should both be completed by mid-October. A remodel of Temecula, Mission Valley, Oceanside and Carlsbad will follow.

Rubio's is also rebranding, adding "The Coastal Grill" to their logo to better reflect the evolution of their menu and done in preparation for a planned expansion into seven new locations by the end of next year.
