Welcome to our photo series Eater Scenes, where Eater photographers visit some of the city's great restaurants to capture them at a certain, and very specific, point in the day. Today, a visit to Cowboy Star Restaurant & Butcher Shop at 7 p.m., on a Thursday.

We continue The Five Days of Meat with a look inside Cowboy Star on a busy evening. The East Village steakhouse, first opened in 2008 by Jon and Angie Weber, is gearing up for expansion into Colorado, where they'll open a new steakhouse later this fall.

Cowboy Star has the luxury of having their own full-service butcher shop next door, which stocks grass fed, corn fed and dry aged beef in addition to poultry and game and provides the steakhouse with meat as well as being a walk-in retail space.

Executive chef/partner Victor Jimenez oversees the kitchen, where Monday through Thursday, he offers a book-in-advance, nine-course chef's tasting at the chef's counter.
