It's happening people; Bruxie has landed. The waffle sandwich shop's first San Diego location opens Tuesday morning near SDSU and Dean Simon, who co-founded Bruxie in 2010 with Kelly Mullarney, says that our second local outpost is due in Fall 2015, when Bruxie will open a 700-square-foot kiosk with outdoor seating in the new park being built next to Horton Plaza.
The 1,500-square-foot College Area spot is adjacent to SDSU's dorms and having Bruxie on their meal plan means that students will be eating waffle sandwiches for breakfast (smoked salmon and dill cream cheese), lunch (pastrami with gruyere), dinner (their signature buttermilk fried chicken) and dessert (lemon cream with berries. The menu also includes the traditional Liege waffle, that crunches with caramelized sugar.
The family-friendly eatery plans to be open until 10 p.m., with potential extended hours through the summer; Simon, who says Bruxie's next stores will be in the LA-area and Las Vegas, indicated that the company may also expand in San Diego, possibly into North County.
