Local drink consultants and caterers, Snake Oil Cocktail Company, who were recently profiled in the U-T, have just announced that they'll be overseeing the cocktail program at two new restaurants opening in Baja's Encuentro Guadalupe Antiresort; due by summer from chef Flor Franco is a fine dining spot called Resguardo and a cantina serving modern Mexican tapas. This isn't the San Diego-based cocktail company's first foray into Mexico; they also created the drink menu at Chad White's La Justina in Tijuana. [EaterWire]
